Braised Pork with Quail Eggs
 

1. Ingredients: 700g of pork belly with skin, 200g of quail eggs, 3 star anise, 5 slices of ginger, 1 green onion, dark soy sauce, salt, rock sugar, and white wine.
 

2. Clean the pork belly with skin, cut it into long strips, blanch in hot water, drain and set aside; clean the quail eggs, boil them until cooked, peel, and poke several small holes in them with a toothpick. Clean the green onion and cut it into sections, clean and slice the ginger.
 

3. In a dry frying pan, heat on low, add the pork belly and fry slowly for 2 minutes until the fatty part starts to release oil and turns slightly yellow, then flip and continue frying on low heat. When both sides of the pork belly turn yellow, add dark soy sauce and stir-fry evenly.
 

4. When the pork belly turns dark red, add the green onion, ginger, star anise, rock sugar, pour in the white wine, and continue to stir-fry until fragrant, then add boiling water to cover the pork belly.
 

5. After boiling, transfer to a clay pot, cover, bring to a boil over medium heat, then simmer on low for 20 minutes, add the quail eggs, and continue to simmer for a while to allow the flavors to meld, then increase the heat to reduce the sauce.
